Sweet Potatoes

This is my own recipe I’ve come up with over the years. I did the topping different this year. For those who want the traditional marshmallow, and the ones who want a different low key topping


My Sweet Potatoes


6 Lrg. Sweet potatoes: I bake them till they’re soft. Let them cool, then peel the skins off. Then mash in a bowl.

Now add to the potatoes:

A splash of vanilla

2 generous Tbl. of brown sugar

1/3 c. Milk

1/3 c. melted butter

1 egg


Mix all of this into the potatoes.

Butter a 2 qrt. baking dish. Pour potatoes in the dish. Top with your traditional marshmallows, or top with crunchy topping. Or do half and half.


Crunchy Topping:

1 c. Corn Flakes, crushed

1/2 c. chopped pecans

1/3 c melted butter
