Mexican Taco Salad

One last story to share about my Grandmother, she was always known for her made-from-scratch, home cooked meals. Growing up traveling down to visit our Grandparents, we always knew we were going to be treated very well with my Grandmother's home cooking meals. No matter what time we arrived from our travel, walking into their home, it was the aroma of food that gave us the comforting feeling after a long drive. She had the table full of all the courses of meals she had prepared that day for our arrival. And every time we were heading back home, Grandmother would pack up all the food plus extra fruit, and fill the back floorboard of the car FULL, so we can enjoy her food, for when we got back home.


This recipe I'm sharing, is one my Grandmother made, that we could not get enough of. She would make a big bowl of this Taco Salad, and keep it in the fridge. You know those recipes, the longer it sits, the tastier it gets? She had this recipe from the Lonoke Methodist Church cookbook.


Mexican Taco Salad


1 c. chopped green pepper

3 garlic cloves, minced

1 1/2 c. chopped onion

1 Tbl. Cumin

1 1/2 lb. ground beef

1/4 tsp. chili powder


Brown all the above together. Melt 1 lb. Velveeta cheese with 1 can of Rotel. Shred 1 small head of lettuce and cut up 2 large tomatoes. Crush a medium size bag of Fritos. Toss meat mixture,

cheese, lettuce, tomatoes, and Fritos together and serve.
