Classic Hamburger Veggie Soup

1 lb. ground beef

1 med. onion, chopped

2 garlic cloves, chopped finely

Chopped potatoes, or pasta, or rice, whatever you want to use.

1 bag of mixed veggies, thawed

1 28 oz. can crushed tomatoes, or tomato sauce.

1 1/2 cup of beef broth

1 c water

1 Tbl corn starch

1 tbl. each oregano and basil, or Italian seasoning.

Salt and pepper to taste

1 Tbl. Olive oil


Cook ground beef and onion in olive oil, till beef is brown and onion tender. Add the garlic and cook another 2 minutes. Add all of the other ingredients into the pot.

Pour 1 cup of beef broth into small bowl and add the corn starch. Mix till smooth, and add to soup.

Bring to a boil, then reduce heat to a simmer.


Everyone has their own version of this soup recipe. You can’t go wrong with this soup. You can add anything you want.

A good slice of Italian bread or breadsticks on the side will be delicious.
