Chicken Rice Dinner

This is a real simple recipe for any weeknight dinner.

Simple to make, and simply delicious.

You choose what chicken pieces you want to use in this recipe.


To get started:

I use chicken breasts (2-3) and chicken thighs (3-4)

1 1/2 c. Rice I use brown rice

2 cloves of garlic, minced

2 Tbl. Butter

1 1/2 c. Chicken Broth

1 1/2 c. Water

1 to 2 tsp. Thyme or Basil. I also use Italian seasoning.

Preheat oven to 350.

While the butter and garlic are baking, salt and pepper the chicken. Then sprinkle some of the seasoning on the chicken.

Put the 2 Tbl. of butter and minced garlic in a 13 x 9 baking dish. Place in the oven for 15 minutes. Take the dish out halfway and stir the butter and garlic, and put back in oven. Then remove the dish, and pour the rice in the dish. Place the chicken on top of the rice. Combine the broth and water, and pour around the chicken.

Cover the dish with foil, tightly. Bake 40 minutes. Then I up the temperature to 375 and bake uncovered another 30 minutes. Checking to make sure the liquid has been baked in.


For a side dish, I like to have roasted carrots or green beans with this dinner.
