My Recipe...
2 1/2 c. All Purpose Flour
1 Tbl. Baking Powder
1 tsp. Baking Soda
Pinch of salt
1/2 c. Butter - melted
1/2 c. Sugar
2 eggs
1 c. Milk
Splash of vanilla
1 1/2 c. Blueberries
Streusel Topping:
1/4 c. Sugar
1 Tbl. Flour
1/8 tsp. Cinnamon
1 Tbl. Butter, melted
Mix all together and set aside
Preheat oven: 375
Grease standard size muffin pan.
Combine all dry ingredients, set aside.
Mix melted butter and sugar, add eggs, milk, vanilla. Then add dry ingredients. Fold in blueberries.
Using a scoop or spoon, fill batter to the top of muffin cup.
Sprinkle streusel on top.
Bake 20-25 minutes. Use a toothpick to check doneness, and toothpick comes out clean.
Let cool, then enjoy!
