Banana Nut Bread

This recipe has always been the one I’ve made all these years. How many variations of Banana Nut Bread can there be? Maybe once you find a recipe you like to make, it becomes the only one you make. I’ve tried many, but I keep going back to the recipe I like. And, there’s a little sentimentality about this recipe. My Grandmother Bailey gave me a recipe book one Christmas many years ago. It’s called “ Our Daily Bread“ by the Lonoke United Methodist Church. You know you’re going to get a recipe book full of good tasting comfort food. There’s something soul - enriching about homemade “ Church Lady “ food. Church Ladies bring a smorgasbord of delicious comfort made food. They would have a layout of all sorts of dishes, categorized by entrees. There would be numerous tables each completely filled, from appetizers, salads, breads, main entrees, and a full dessert table! You could not pass up one table, no matter how full your plate was. The “Church Ladies “ took care of you. Filling our hearts and souls with their homemade blessings. I’m sharing my Banana Bread recipe with you all from a book full of lovely, homemade, and soul - enriching recipes. Banana Nut Bread 1/2 c. Butter softened 2 eggs 2 c. Flour 1/2 c. chopped nuts 1/2 c. Sugar 3 mashed bananas 1 tsp. Baking Soda 1/4 tsp. Salt Preheat oven 350. Cream butter and sugar. Add eggs, then add flour, soda, salt and nuts. Add mashed bananas. Grease a 9x5 loaf pan. Bake one hour. If you noticed the extra banana I had, I sliced it in half lengthwise and crossed it on top of the bread when I baked it. I’ve had people make comments, because they say it looks like a “ fish” on top Well, it definitely is not. Hope you enjoy the recipe. Thank you Laurie Walker Photo Credit- Laurie L. Walker Photos
